xinetd wraps the other servers and reports a single process. i don't
know much about the technical details, but you won't see other servers
such as ftp etc. It's completely normal.
The way to tell if anything is running is of course to simply telnet to
the port. if you get no response, it's not running. if you get
connection refused, it is running but is refusing you access. if you
connect, well...
